Heavenly good 4 ingredient pancakes

Sunday is for no pants and pancakes, right? No Sunday today? Don´t worry! These four ingredient pancakes are really fast to make so you can make them during a week as well and are so delicious!  You should definitely give them a try. I´ll tell you why : they are ready within 15 minutes, contain good fat, cinnamon which is good for your digestion and a lot of other things, egg whites from happy chickens which gives you the protein you need and as I said they taste just heavenly ! I usually put homemade melted chocolate topping on the top, but feel free to eat them with homemade jam, nut butter or just fruit.

  • Prep time : 15-20 mins
  • Portion: 2 servings
  • Supplies: pan, grinder for nuts, blender

Ingredients for pancakes: 

  • 2 egg whites from happy chickens ( I tried to use the yolk as well, but as I found out the consistency is better when using the egg white , but feel free to try or if you don´t want to throw it away, just make muffins or so:) )
  • 2 spoons of grinded whole grain rice cereals or flour ( you can use buckwheat as well )
  • 1 big ripe banana 
  • cinnamon
  • 1 spoon of virgin coconut oil ( to cover the pan )

Ingredients for chocolate topping : 

  • 25g of chocolate butter
  • 1 table spoon of raw chocolate powder 
  • 1/2 table spoon of good quality honey

Method :

At first melt the chocolate butter ( either in the oven or on the stove ). Once melted just add the raw chocolate powder , honey and mix well. And your topping is done. :) Also melt the coconut oil and spread it on your frying pan. The coconut oil is preventing them from getting sticky.Blend two egg whites, banana, cinnamon and the rice or buckwheat flour in a blender ( in case you have cereals, grind them seperately and then blend with other ingredients ). Once the pan is preheated take a table spoon, your dough and make small pancakes on your pan. Do it on a low/ medium heat, so they have enough time to get done ( inside as well ). You can turn them on the other side after a minute of two ( once they are nice and golden ). Be patient, the dough is very fragile. There will be around 15-20 pancakes. My advice is to make them smaller, it is easier to turn and also very cute. Add fruit, coconut yoghurt,  chocolate topping, homemade jam , nut butter or anything your heart desires. Done! And so delicious! :)
